02The craft

How a macaron comes together.

Skip the scene
Illustration of the classic French method, not a record of this kitchen's recipe.
  1. Pipe

The batter is piped in neat rounds, the bag held straight above the tray.

  2. Rest

The tray is tapped to settle the tips, then the shells rest until a light skin forms.

  3. Bake

In the oven each shell rises on its ruffled “foot”.

  4. Fill

One shell is turned over and a filling is piped onto it.

  5. Sandwich

Its partner is pressed on top, and the filling meets the edge.
